GITK - White Chocolate Chip Cookies

I almost forgot to post this. Things have been a bit crazy around here. Just found out today that my dear husband has to have emergency surgery on his spinal cord. Ouch! I'd be baking out my stress today if I only had the ingredients!

Sunday I broke down and baked cookies. I'm not the best cookie baker - I always either cook them too long or not long enough. But, as luck would have it, these came out great and got rave reviews at the office. Someone even asked for the recipe, which made me very happy.

I don't have a mixer so I did this all by hand. I just turned on the most recent episode of Grey's Anatomy and stirred away.

White Chocolate Chip Cookies

1 C. butter
2 C. Sugar
2 eggs
2 t. vanilla
2 C. flour
3/4 C. cocoa
1 t. baking soda
1/2 t. salt
10-12oz White Chocolate Chips

1) Preheat oven to 350 degrees
2) In larger mixer bowl, beat butter and sugar until creamy
3) Add eggs and vanilla - beat until light and fluffy
4) Stir together dry ingredients
5) Gradually add dry ingredients to butter mixture, beating until well blended
6) Stir in chips
7) Drop by rounded teaspoons onto ungreased cookie sheet (I use parchment paper)
8) Bake 8-9 minutes. Do NOT Overbake!!
9) Cool slightly on sheet before removing to wire rack
10) Cool completely before storing
